The 31-year-old’s new foodie venture, HOP, brings a Vietnamese twist to the Square Mile and is targeted at his former colleagues and time-pressed Wharfers.
Healthy, on-the-move options of breakfast Banh Mi and Congee - a Vietnamese porridge - have been created around the Asian concept of Com Binh Dan, translated as 'working people food'.
The former offers a sandwich-like start to the day with hearty bread crammed with fresh fillings including spiced pork and fried egg and bacon and omelette.
