The Icelandic-inspired twist on a Daiquiri is the signature tipple and it's a perfect balance of lemon sourness and comforting indulgence.
Tastes of summer continue with a lighter, three-course menu.
The sea trout ceviche is the standout, with its soft, ruby red cubes paired with creamy avocado puree, earthy fennel and sharp grapefruit.
It was ideally paired with a dry, crisp glass of biodynamic wine, Domaine de Belle Vue Muscadet to bring out the tangy tones of the fruit.
We followed it up with a panna cotta with substance.
The dessert was chunkier than the regular, wobbly version and floated on a liquid moat of Burlat cherry and red wine granite.
A surprisingly delicious sparkling rose, Le Casot des Mailloles, amplified the fruity flavours with its light, sweet taste.
Manager Daniil Vashchilov’s pairings show his skill in finding biodynamic, natural and organic wines that enhance seasonal, locally sourced dishes and he holds regular events.
