REVIEW
The name "Tequila" is evocative of many things - spaghetti westerns, stag nights, teenagers' rites of passage among others.
But something most people do not think of is a unique, quality spirit. They do exist, however, and this is one of them.
El Jimador is produced and estate bottled in the village of Amatitan in the State of Jalisco and is now the top-selling Tequila in Mexico.
The name itself derives from the expert jimadors who harvest the blue agave after judging precisely when the plant is ready for production. A hundred per cent agave is made into a form of beer (pulque) which is then distilled in order to make Tequila.
This example is a "Reposado", meaning that it has bean briefly rested in oak barrels - in this case virgin oak - for just two months.
Longer wood ageing risks destroying the delicate vegetal arroma and distinctive taste which is the beauty of Tequila.
The nose is lightly honeyed leading into a pleasantly earthy, fudgy palate. Rounded and textured, it makes an ideal sipping Tequila or served over ice with a slice of lime. Do try it and surprise yourself.
